Do you remember when I first talked about TasteSpotting? I casually mentioned “If your local CSA gave you 10 pounds of zucchini and you are looking for something other than sautéed zucchini just enter zucchini in the search field and 1013 posts from blogs all around the blogosphere appear.” Well, that is what I did and I found this yummy recipe from The Cooking Bride. Unlike the Cooking Bride I have more zucchini than I know what to do with. The family garden cup runneth over with zucchini this year so I was dying for something new. I modified the recipe a little. I didn’t have seafood seasoning or Italian breadcrumbs. So I used dried oregano and thyme crushed them up and put them in the breadcrumbs and used left over Chesapeake Bay seasoning as my seafood seasoning. Also, I skipped the butter and opted for another medium egg and fried in peanut oil. They turned out great. If I do say so myself.
